RECIPES // Peanut Butter Millionaire's Shortbread

Peanut butter millionaires shortbread

i was home alone yesterday and decided i wanted to bake something, without having to go out and buy ingredients. These are what i ended up concocting, from whatever was in the house.
(i found a vaguely-similar recipe online, but the settings for cooking the shortbread were way off and the caramel wasn't anywhere near sweet enough, so this is adapted so much i'm not even going to credit the original. Cheeky!)

These wound up being really good though, if i'm allowed to say that myself.

For the shortbread layer you'll need:
270g plain flour
80g caster sugar
180g butter

To make:
- Preheat the oven to 180C.
- Lightly rub all the ingredients together in a bowl, until the mixture looks like breadcrumbs.
- Press into the bottom of a greased tray (i forgot to grease mine and they actually turned out okay, but better safe than sorry).
- Bake in the oven for approximately 25minutes: times may vary according to your own oven, but keep an eye out and bake until the shortbread begins to turn a light golden colour.
- Remove from the oven and allow to cool.

For the caramel layer you'll need:
40g butter
160g peanut butter
175g condensed milk
75g golden syrup

To make:
- Melt all the ingredients together in a pan, over a low heat.
- Once melted and fully combined, continue to simmer for a further 10 minutes, stirring continuously until the mixture begins to thicken.
- Pour over the top of the shortbread, spreading evenly, and allow to cool and set.

For the top you'll need:
200g good quality milk chocolate

To make:
- Melt chocolate on a low heat.
- Pour over the caramel layer and allow to cool and set.

Et voila! Ready to enjoy.
